In the medieval world, bread was life — and the Baker was the person who made it possible. Working through the night so that towns and villages could eat at dawn, the baker was one of the most essential and most regulated tradespeople in all of medieval society, subject to strict laws that governed the weight, price, and quality of every loaf that left the oven.

The infamous Assize of Bread in 13th-century England set the price and size of bread according to the cost of wheat — and bakers who cheated their customers faced brutal public punishment, dragged through the streets on a hurdle with the offending loaf tied around their neck. Yet the baker’s trade was also one of warmth, community, and craft. The great stone ovens that anchored every medieval town were gathering places, sources of heat in winter, and the origin of the phrase “a baker’s dozen” — thirteen instead of twelve, to avoid the penalty for short measure. Every feast, every fast, every ordinary day began with the baker’s work.
